28 minutes north of Mount Dora, inside DeLeon Springs State Park, is the most fun breakfast in Central Florida. The Old Spanish Sugar Mill Grill puts griddles in the middle of each table. You get pitchers of stone-ground batter and make your own pancakes while the mill’s 30-foot water wheel turns outside the window.
The mill was built in 1831 to crush sugar cane. It ran until the Civil War, then sat until the 1960s when it became a restaurant. The concept hasn’t changed: $7.95 for all-you-can-eat batter, plus syrups and toppings. Blueberry, chocolate chip, pecan. You control the pour. Kids love it. Adults get competitive about the perfect circle.
After you eat, walk off the pancakes on the half-mile nature trail or swim in the 72°F spring. It pumps 19 million gallons a day and stays the same temp year-round. Manatees show up in winter.
The wait on weekends is 90 minutes. Go Wednesday at 10am and you’ll sit right down. Park entry is $6 per car. The mill is cash only, which feels right for 1831.
Local Tip: Order a side of the apple butter. It’s made on site. And don’t flip too early — the batter bubbles tell you when. Mount Dora people drive up here when they have out-of-town guests and want to show off “Old Florida” without Mickey.
